A pound of beans gave us five pints for the canner; they are cooling now.

One windshield sunshade was big enough to line the bottom, sides, and make an internal lid for the thermal cooker. The reflective lid is on top of the pot, then a thick towel. Then the cooler lid is covered in another thick towel and I weighed it down. Will check the water temp after eight hours. I made an error in my initial calculation for temperature loss, initially it was 7 degrees per hour and that’s too much.
 
Are those special jars IM? Looks like they may have a tiny release type hole in the lid maybe?
They are Ball brand fermentation lids on wide mouth canning jars. You can get them as a kit with springs included to hold your veggies under the brine. I don’t like those springs, they mush up stuff, so I use glass fermentation weights and fill my jars all the way up with brine so there’s as little air as possible in there.

I have pickle pipes too which are a silicone lid that is held down with canning rings. I’ve never had good luck lacto fermenting with those so I’m trying them on my juice project. There’s enough gas in those that I’m pretty sure any air in the jars is being pushed out. I hope anyway.

Comparison photo of the pickles. I opened them to have a whiff and they smell fantastic! It will be a few more days before they’re done

I took the raisins out of the vinegar since there were no more floating and moved it to a new jar to finish. If it doesn’t smell better soon I’m going to toss it and try again. I may use golden raisins instead the next time. It smells like vinegar, but not good.
