DW gives me hers... I wish I had a real root cellar... I'd buy the big crock and keep my pickles in there year around. They go soft when canning.
It is all in how you can them. If you follow the recipes and boil or pressure cook them they will come out soft.

I place mine in the sterilized jars, pour the boiling brine over them, seal and turn upside down on the counter. As they cool, the jars seal and I turn them right side up for pickling and storage.
 
I bought about 30 white earth boxes from earth box.com ten or 15 years ago. i use peat moss for wick and about 1 inch up .The rest i fill with sand compost mix.​
For my raised beds I start with a majority of sand and sawdust Add peat, some aged horse manure and mushroom compost. Then garden with the midleiter (sp) method. Each year I add fresh compost and maybe sand depending on loamyness.... After about three years I have an active good soil that really doesn't need supplements. I also add chicken blood on processing days.
