bamboo is not that flexible. rattan could be woven but is no where near as strongLooks good, Oz. Is it nailed together? I thought it would be woven.
once the bamboo is has dried for a few months, it will get a coat of paint.Oz that is very very nice... do you paint or stain to help it weather? I am thinking of the nails I saw him tapping in... I love bamboo. I would love something like that for wind screens at my house actually... or the look of it...

How thick is the bamboo? If it was about 4-5mm it could probably be bent if you soak it properly first. Sea water would probably cure it nicely.
I'm thinking the nails will give up pretty quickly with the salty air, that's why I'm suggesting the weaving. But it's true, the workload would probably increase significantly. You could try it small scale though, and see how labor intensive it is.
