Thanks for the detailed run-down! It's good to be hearing more about this breed. I got some WH from Metzer's a year and a half ago who started out crazy like that. The pair I kept actually did calm down with time. Here's hoping you get the same results.
My Golden 300s were great for eggs! They were a bit flighty, too, but MAN could they lay! I don't know who it was, but someone was laying either double-yolkers or two eggs per day for weeks straight last spring. Sadly, my husband isn't as fond of ducks as I am, so we traded most of the flock in for chickens.
