Ya, I read to cook it rare and I never had duck and couldnt stand the thought of rare "fowl".and way past med rare
which is part of the reason it was tuff aka duck jerky

sounds good . I dont eat peaches but ....I might try cranberry and orange, maybe peach? Maybe just the salt and pepper. I don’t have any bourbon.
