It'll have juices in the crock. Drizzle in oil and just enough water to cover. Then take the meat out when it's done and whisk in a little flour or cornstarch and that's gravy!

Salt and pepper, onion and garlic if you have it. We use onion, bell pepper, and celery in all the Cajun foods. They call it the "holy trinity."
so sometimes I use celery salt, and the six pepper has bell pepper in it. But it's spicy.
