Silly question but just what is the difference between light and dark corn syrup and are they interchangeable ???? AND the answer is not the color.

haha, I remember asking mom this. they are interchangable. She said it was the cooking process one was Browned ? for a richer flavor ..

so in that case I had better stick with the light. And save the dark for homemade BBQ sauce.
