We make sauerkraut in a 5 gallon crock. Just cabbage and salt. Pound with this big wooden thing my mom called a kraut stomper.
I am confused . if you shred cabbage, salt it and let it set wont it rot ? turn brown and such ?

old folks back in the day said if you make kraut at that time of month '"period" it will go bad and turn brown...
