I went to wal mart a few years back and bought a bunch of poinsettia flowers on wire bush stem and some big sun flowers. I cut the stems short and made them into a circle x2 for the napkins and a bit longer on the sun flowers for tie backs for my curtains.

Yes I had considered them or highland or Galloway. But honestly I have no desire to have to milk cows or goats or sheep. And yaks are just a little "twisted" from normal. LOL and THEY are cool
