Yes that is the "Chinese set" Those are the best rib spreaders I (and several others) have used.
I purchased this set- it also came with a bobbin of thread not shown in the picture.
Does anyone know of any instructional videos using a set like this? There is a tiny hole in the end of one of the instruments (barely visible in the picture). Could that be to put the thread through in order to make a loop to pull out the gonads?

Yes, the hole is for the thread. This isn’t an instructional video, but it shows the Chinese set being used. You can’t really see it too clearly, but the guy flips the tool around and uses the thread to remove the 2nd testicle.
 
Does any of your capons crow?
Some do, and some don’t. Most of the capons that I have that crowed were slips. In a flock of them, seems like the most dominant one is the only one that crows, but i think it’s due to other crowing roosters in the distance within my area. From what I noticed, the crow isn’t as loud and it’s more like a half crow. (imagine if i rooster went cockadoodle doo, mine would go cockadoo). A regular rooster seems to want to crow throughout the day, whereas mine seemed to only give out 2-5 crows in the morning. Putting a no crow collar definitely works much better on a capon than a rooster (which seems to always want to crow at the top of its lungs).
