I should mention -- we have been getting a lot of soft-shelled eggs that quickly begin decaying. I was never sure what to attribute that to, but now I know...I feed my adult laying female quail 16% LAYER chicken crumble feed. No grit, no oyster shell and zero treats.

Is that mesentery? I don't believe anything should be yellow like that other than fat and egg yolks, but that's my guess only.

I believe you would smell infection and it did not look runny, FWIW I agree with others that it may be tissue colour change due to nutrition feed type and balance.It smells like bird poop and dead bird, I guess, but nothing strong or extremely unpleasant.
