I cheated and Googled it

Okay lol

You start like normal. When the first side is done and you flip it you immediately throw the last 2 pieces of cheese on the top that was just cooked and still hot. That helps the melting.
Then you add the bread and when the second side is done you flip it again and cook the third side.
