Hard boiled eggs

In tact, just in a steamer basket in a pot on the stove on medium heat. I'm about to go do some soft boiled for myself for some ramen lunch today.

Thank you again! I have a large (stove-top) steamer; I'll be eggsperimenting to make hard as well as soft boiled steamed eggs!

If I can add one thing to this thread..it is to wash the bloom from your fresh eggs really well with dish detergent and a washcloth . You can feel the slick bloom soften and clean off. This step seems to make a big difference when hard boiling eggs.

I use a big rice steamer and fresh, rinsed eggs used to explode quite frequently until I added the detergent to open the shell pores.
 
I agree with the folks who use an Instantpot. I set mine at high pressure for 4 minutes and let it cool down naturally. No ice water bath needed. Day old eggs peal with no problem! Even my goose eggs come out perfect, and if you’ve ever tried to peel boiled goose eggs, you know it can be a challenge. I do cook them a little longer.
 
For home grown eggs this works every time for me. All the eggs I boil go in the refrigerator so they are cold when I get ready to boil them. I boil enough water to cover the eggs then but the eggs in the boiling water for 12 to 15 minutes. While I’m waiting I make an very cold ice bath in a large bowl. I then take the eggs from the boiling water with a slotted spoon and put them in the ice bath. When cool, they are easier to peel than store bought eggs. This cold, hot, cold method is the trick to separate the shell from the egg.

That is exactly the way I used to do it. Man I hated trying to peel them though.
So I goggled it and it said boil for around seven minutes.
That's the way I have been doing them lately.

Whenever I put cold eggs into hot water, half of the shells would crack:idunno and the white would ooze out

You could try to put the eggs in the hot water just before it starts to boil. That will help prevent them from cracking. This will help cook the outside of the egg so if it cracks the whites then can’t escape the shell. That’s what I used to do with store bought eggs. They crack every time when you put them in boiling water.
