Hard boiling eggs...

Here are some articles about egg refrigeration and storage. Refrigerating eggs is largely an American idea and not as common where eggs in stores are fresher. As long as it is cool enough inside your home and the eggs have not come into contact with water you do not have to refrigerate if you choose not to. It seems to be a general consensus that eggs will last a little long if refrigerated but I have not read the exact science or timeline of this. If you want to store long term you can freeze.

o.k. totally off the subject of how to cook eggs - where did you get such a cool egg holder??!!!! what is it called and any ideas on how to find one of these? i put my eggs in a basket and need to write dates on them to know which to use first. this would solve that.
 
Try peeling duck eggs. They have a really thick membrane. I have dropped them on the floor , the shell would crack but that's it. I put them in cool water. Salt and vinegar in the water. Bring to boil for 5 mins then cool let stand in pot for about 15 mins. Whole lot easier.
 
I find that store bought are easier to peel and I believe its due to them being old, but I still am able to peel my fresh farm ones with some success.
I add my eggs, add water, put in some vinegar( my grandma taught me this), bring to a rapid boil, remove from heat, put on lid and when I'm ready to eat them I peel them under cold water.
