My incubator is showing a temp of 37.5c and the one I put in the inside is showing 101.7 f

Yes - your incubator unit is likely the one that is wrong.

You really need two identical, reliable units to calibrate them well. If one reads 100 and the other reads 100, then you're set. If one reads 101, and the other 99 - the temp is likely 100 and it is safe to calibrate them as such. But this will only work with two, identical, units.
