She'll be sleeping in the kitchen since that's where she will be during the day as well. She's not exactly house broken either. I'm working on that and leash training. At what age do they start holding their pee longer?

Puppies shouldn't be expected to "hold it" more than 1 hour per month old, plus and hour... so at 8 weeks, that would be three hours. Some can go longer, but that's the general rule. Here is a neat suggestion. get a bell and hang from your doorknob. (bell should be nose level) Everythime you take the pup out, ring the bell and say "potty time" or something like that. after two weeks or so, when you bring the puppy to the door to go out, say potty time and wait 10 seconds. hopefully the pup will ring the bell. If he doesn't after the 10 seconds, ring it yourself and then go out. The pup will eventually figure it out and ring the bell when he needs to go. The other thing to do when you bring them out to go and use a word. I use "hurry up" cause I really want them to.

Once they "go" lots of praise and bring right back in in house. Eventually they will respond to the hurry up, and know that's what they are expected to do. I have lots of tips... and am expecting an 8 week old doberman March 1st.. we can potty train together!!

Congrats! I'll have to try that too.
 
Well let me think, I think my pup now went all night at around 4 months old. At 8 weeks he could go about 4 hours, he gained about an hour a week. i will never forget with this litter there was one female who HATED her collar, for 2 weeks anytime a collar was put on her she would though herself down and flop like it was killing her!!
So what am I to do when I'm gone 10 hours a day? I can't crate a 8 week old pup and expect her to hold it.

do you have a fenced in area to put her in the daytime?

doggie daycares are wonderful options...perhaps there is one in your area. great for socialization, too although I think they have to have all of their shots first before they can go to one.
 
my pup was litter trained. by about 4 weeks old he would use a box of pine pellets to potty in. The pups were set up in an exercise pen. Newspapers covered in towels covered most of the pen, but a box was cut down to make a LARGE litter box. pups would potty in litter box 90% of the time.
