WHAT I have found from others is if you boil it then you can eat even an old chicken, of course that limits your dishes. We have eaten roos up to 16 months old never any older yet.I have never eaten my own chickens (yet) but this year I'm thinking about it. I have 2 roos that I want to process- at what age would you say a rooster is too old? And is it just because the meat is tough? Is there no way to soften the meat for human consumption?
