Ok, so....no matter what, tho, the yolks sac "should" be at the bottom (pointy, non airsac) end.....is that correct??

should be, yes.
Imagine laying on your back, tuck your knees to your chest (feet sometimes fold up, sometimes down), neck rolls toward the left side, to look right (usually under right arm/wing) while head continues to turn around almost 180, to look in the opposite direction. Now stuff yourself inside a ball and try to break out.

Ohhhh man. Now I'm worried. Because it does make sense for all that yellow to be the yolk sac at the open end. Oh gosh!!!

Day 35 Been watching and eye trying to find its beak for 2 days. Suddenly tonight, another one poked ot the other end.
One is yellow, one is black

It could be it's knee or foot... They can't move around really when they are near hatch.
