Oh! And we're heading out to Lakeside second week of January to check out possible pieces of land. Well and see what winter is like there.

Original plan was to get a couple of lots (about 65 x 130 each) side by side with the water and electric already at the edge of the property but now we are thinking of going a little out from town so we can get a bigger piece of land and see about the cost of running the water and power to the property ourselves.
 
I don't know haw far out you are planning to go.
Generally, Electric is not too difficult to obtain.. but water , If there is not water and sewer already in place, then it would cost a small fortune to have it run out, even if you could get them to do it..
I don't believe they will run water without sewer.

We are supposed to speak with a Realtor so I'm sure they will set us right as to what is possible. All of the available lots we looked at last trip had electric, water, and sewer (forgot the sewer last post :)) so to still have a shot at the close hookups, we won't be too much further out. But we are so keen on having our layers, roasters, meat rabbits, and garden we'll really need a little elbow room.
 
Yes (tiny town) but roosters making a ruckus could be an issue. Not forbidden, just not allowed to trouble neighbors. I plan to start with hens then use the eggs for bribes when the roasters start greeting the dawn.

roosters also greet the yard light when it goes on or car lights when we drive in after dark .. and sometimes even the high noon sun.. LOL

You could go with well and septic, if you have enough land... that's what I have. Wells are pricey though
I looked into solar but it would take 10 years to break even...in theory... and I am sure that was under ideal conditions LOL
