somebody on a different thread mentioned toasted cheese sandwiches. that I like. with a can of Campbells tomato soup. um umm goood

We love Chilli con Carne in our house. The leftovers are versatile too. Nachos, burritos, tacos and tortilla stack! We also go through a lot of cheese and sour cream in our house :D
 
It sure is hard to cook for just one person.
Yup....mostly because of the lack of camaraderie.

Hard to make a small kettle of soup from scratch.
So you freeze portions of it...then east meals in the microwave.
I say this every time I make something 'big'....but often end up eating it all before freezing any because I don't want to cook anything else.
 
I don't like freezing precooked food.
In our freezers it is too hard to keep track of or find what I am looking for. a person would have to have a good filing system.. and we already fail on that score with frozen foods.
we have 3 freezers..and
two refrigerators/with freezers in them, too..
Had five freezers, but one conked out and we gave the apartment sized one to DD..
I personally think we could get by with just one refrigerator and eventually one freezer, but have to convince the boss about that..

No jammed packed fridge or freezer or pantry/cupboards here.
I sometimes let the fridge and pantry go almost bare before buying more.
Get rid of all that stuff, I hope it's dated.

'Carne' means 'meat'.

We have one fridge/freezer combination that does for 4 humans, 3 dogs, 3 cats and 5 chickens. Of course we need to shop once a week...

Our chilli con carne is made with minced meat, onion, garlic, tinned tomatoes and tinned red kidney beans with lots of paprika, chilli powder, cumin and oregano added. No mac anywhere to be seen. It's good with rice, sliced avocado or guacamole and corn bread or corn chips .

Edit: I think you call minced meat "ground beef" in the USA?
 
My chili is very similar to yours. Yes , ground beef. chili powder , garlic, a dash of lea & perrins worchester, a small handful of brown sugar, tomato , a squirt or two of ketchup, kidney beans, onion , salt and pepper.
No pasta for me. Annie makes some on the side in case anybody wants some.
I might add some pasta if the chili looks too thin, just to thicken it up a bit.

yesterday was not a good day for plowing. The tractor is still stuck off of the driveway where I push the snow. Can't budge it with the 4wd pickup truck.
have someone coming this afternoon to get me out...
we shoveled 2 feet of snow off of the pickup truck hood and windshield. There is just about a foot deep on the driveway..
I think I will make some banana bread this morning. have a bunch of black bananas.

In a pinch, we added pork and beans.
I add whatever is on the shelf. Red, black kidneys.. No Lima beans yet, though.

I put Lima , red and black kidney and pork and beans into my cowboy beans.
some chopped up bacon and hamburger.
onion, garlic and ketchup.
a handful of brown sugar and a dose of molasses..
Annie drains the juice off of the kidney beans. I don't drain anything.

I apologize for being absent. Have not felt well. Sinus infection, ear infection, now antibiotics that likely will not help with only 10 days worth. Trying to finish a wall hanging to send to Canada, but I doubt it will get there for Christmas.
Glad Annie is recovering well, Jim!
