Hey Grandpa, What's for Supper? Part 2

Sunday was lasagna night..

Monday.. pan fried Dover Sole, big salad, some kind of noodle stir fry thing with veggies in it ...and a poor, lonesome fallen green tomato got fried in bread crumbs and consumed by moi!

Tonight.. something quick when DH gets here. He went to visit a brother in the hospital. He made a pit stop before going.. dropping off half of a Banana Creme pie.. oh my ....so I don't even want dinner!

I did end up making the pork chops the other night. They were yuuuuuuuuummmmy!

Wednesday was B4D. Surprised?

Last night was beef stew.

Tonight will be something out. Only two of us are home and I just don't feel like cooking.

DH took me out wed to the new steak house. It was very good. Last night was "fend for yourself nite". Everyone was going in different directions.

Today I put garden potatoes and pork chops in the crock-pot. I knew it was going to get hot today so I wanted to avoid heating up the house. Its 96 right now. Besides DH will be home late and DS is at FB so everyone will be eating at different times.

My husband is working out of town for three months. I still fix myself nice dinners but this week not so. Thursday was I the mood for a big baked potato with all the toppings.

Friday I was really lazy and ate the other half of my sandwich from lunch. But tonight Baby Back ribs. I do them in the pressure cooker for 20 minutes and finish off on the BBQ. Fall off the bone and so yummy. Oooo may be a nice pasta salad and watermelon to round things out.

DGD had leftover chicken fricasse with dumplings, DH and I had wet-chili-cheese burritos. Tonight smoked keilbasa, bacon-broccoli salad and macaroni salad.

OMGosh! The ribs were so good. A friend had given us a homemade rub which we used generously top and bottom. Cut into pieces about 5 ribs. Put two cups water in pressure cooker, cook for 20 minutes and rapid cool with cold water. Mixed Trader Joe's BBQ sauce with some of our Peach Salsa and finished off the ribs on the BBQ just until the sauce was caramelized. Side of fresh sliced Brandy Wine tomatoes with fresh basil from the garden and the topper ice cold watermelon. We ate until we couldn't eat any more.

We even have some left over for lunch!!!

That sounds sooooo good Dragonfly Ranch!!! Do you know what was in the rub? Did you put it on before putting the ribs in the pressure cooker or after they were already cooked in the pressure cooker? If before, how did you not lose it into the water? I'd love to try this out. I looooove my pressure cooker and like the idea of using it on low on my gas stove rather than pre-baking in my electric oven. My mouth is watering just thinking about this dinner and I'd love to give it a try, perhaps on Labor Day. mmmmmmmm

Dinner tonight was homemade pizza. Delish!
