Hey Grandpa, What's for Supper? Part 2

So should have suck with my first thought for dinner last night - fish with lemon and capers.

Changed my mind on the way home and decided on fish tacos. Had my taste buds all ready for it. Opened the refrigerator - no corn tortillas. Well, let's see - OK flour tortilla and make a burrito instead. Well, it was not what my taste buds were expecting. The texture was way too soft and no real good flavor. Re-fried beans saved the day since they were the only thing that tasted OK. I ate it since I didn't want to start over on something but will definitely not try that one again.

May be pork chops tonight if I don't change my mind again.

Change for dinner tonight. Instead of baked western omelet it is chili rellenos casserole. The canadian bacon that I had in the fridge was no good. I have nothing to substitute it with . That's okay, I have been wanting to make the chili rellenos for a couple of months. Last night DH and I had quesadillas with leftover roast, DGD had philly cheese steak again.

It's Wednesday and that means B4D! It'll be easy, though. DS is slowly on the mend, but last night his fever was 104.1 so I was up for hours trying to get it down. I'm tired and unmotivated, hot from the weather, and needing sleep long before bedtime comes. So, if it goes beyond cereal, it'll be a major feat.

WOW! I sure hope your son is getting better! Were you able to get his fever down? My husband had a really bad fever once and ER Dr told him to keep on drinking water until he couldn't get another drop down in order to get the fever down and prevent dehydration.

Wish I lived closer I'm fix something and bring it over!

Last night was left over blacken Tilapia, red potatoes. Ummm need a nice fruit to go with it - I know a nice glass of Chardonnay.

Tonight no clue yet. Tomorrow enchiladas with home made Tomatillo sauce.

Just created a dish that turned out wonderful:
1 pound cooked/drained spagetti
1/2 pound hamburger
3 links of sweet italian sausage, sliced.
1 green pepper
1 med onion
8oz shredded mozzerella cheese
2 jars of spaghetti sauce
parmasan cheese

Cook hamburger/sausage/onion/pepper together in skillet, drain off grease.

In deep casserole dish greased well w butter, place layer of sauce in bottom, place half of cooked spagetti in dish.

Cover w meat mixture, mozzerella cheese, add some sauce.
Cover w remaining spaghetti, sprinkle parm cheese, cover w sauce.
Bake 45 minutes in 350 oven.
 
BB- take care of yourself and get better quick. I'm glad your son is better though. Lots of soup, juice/water and rest!!

Last night was roast chicken with mashed potato stuffing. DGD loved it, DH loved the potatoes-he really does not like chicken much. carrots and onions roasted with the chicken, corn and gravy.

Tonight is leftover raised meatballs over rice, or over the leftover potatoes from last night. I have some hoagie rolls still.. I wonder if I could put the meatballs on them open faced with gravy over the top??? Salad to go with it.

DGD and I will be making jam filled cookies today.

I had a pot of tomato sauce simmering on the stove since saturday. I canned the sauce today, but saved some to make speghetti dinner tonight. I made italian meatballs, added some fresh tomatoes to the sauce that had been simmering since saturday, cooked up some spaghetti noodles and grated some parmesan cheese. I also baked my freezer bread.
