You can smoke them. put some good oil on them and add some half way through.
Smoking is a low heat and will make older birds tender and tasty!

I've never mastered the pie crust, either. We just eat crustless quiche, or use bacon as a base. When the boys were little I called it breakfast pie, so they'd eat it better. @3goodeggs second what @donrae said. Do the pie or quiche just without a crust. I often do that since one of my kids has celiac (so no gluten). I really like the quiche with no crust.
