Hey Grandpa, What's for Supper? Part 2

Well no gravy tonite, I'm having back issues. I added mozz. instead.
Made the ribs with an onion sauce. Smells great, my tummy is rumbling!!

Your dinner sounds yummy! Do you have a recipe for the gnocchi and the scallopini ..or have you posted it before? I've always wanted to try making my own fresh gnocchi

My dinner is pretty much done ..kebabs still cooking some, though. Salad is chillin' ..rice is settlin' in ..and the eggplant is simmerin'. I didn't make bread cuz my machine is occupied with our regular sandwich loaf, but I don't think DH will complain too much

Thanks Aneesa. It's nice to be missed.

Gnocchi is easy to make. About 1 pound potatoes and about 1 pound butternut (or other) squash. Bake until both are done. Peel potatoes and squash, then mash in large bowl. add about 1 1/2 cups flour, 1 egg, salt, about 1/4 cup Parm cheese, and a pinch of nutmeg. Form into dough and let rest about 10 minutes. Roll over floured gnocchi board or fork (for traditional) or like tonight, form into small balls. Boil until cooked. Heat butter in skillet, add cooked gnocchi and cook until golden and crisp. Remove from pan, add sage leaves and more butter if needed and cook butter until browned.

For basic potato gnocchi use 2 pounds potatoes, 2 tsps salt and 1 1/2 - 2 cups flour.
 
We are headed for the lake as soon as DS gets on the bus. It had over 18 inches of ice yesterday! However the fishing was not worth a darn and we ended up eating soup. It was homemade tomato so it was good but it wasn't Walleye! I put a pork roast, sauerkraut, potatoes, onions and salt and pepper in the crockpot today, just in case we don't have any better luck fishing!

I am still going to make skands corn chowder, hopefully tomorrow. It sounds so yummy!
 
We are having hot dogs and mac n cheese ;boxed, unfortunately, I HATE boxed, everyone else LOVES it.

DH didn't care much for my ribs last night. He is sooo strange! I made this wonderful onion sauce with sautee'd onions and he scraped them all of and left them on his plate!! The ribs were sooo tender, cutting them was like cutting through soft butter! I guess with the leftovers, I'll cut the meat up and do something else with it.

I grew up with corn chowder, I used to make it a lot, good cheap meal. DH doesn't like creamed corn, so doesn't want to try it. I make mine by boiling the potatoes, draining, then adding several cans of cr. corn(depending on how much is being made), onions, salt, pepper, MILK, and crumbled bacon. I have also added meats to it. It is GREAT with ham or smoked sausage added, also salmon is good.

I have no idea what I'm making tonight. That's usually when I raid the pantry and come up with something weird or wonderful. I'm going shopping tomorrow...do dah! lol
 
It's snowin' and blowin' here, so I made a huge pot of beef and vegetable soup. The bread's out the oven and cooling, and an apple cake is making the house smell wonderful.

I love corn chowder, but my family likes it best when I make it with chicken. I boil and drain the potates, set aside. In the soup pot I fry up about 4 strips of bacon until crisp. Remove and crumble the bacon, set aside. Drain most of the bacon fat, then cook 1 finely diced small onion in the bacon drippings. I add chicken stock, both whole kernel and cream-style corn, salt, pepper, the cooked potatoes and cubed cooked chicken breast. Top with crumbled bacon.

I did have TWO pieces of cheesecake yesterday - one in the afternoon after my soup and one in the evening after my cereal. I'm back to eating REAL food again today which was nice since it is my anniversary today and I met hubby for lunch.

Dinner will be leftover soup. I'm not cooking tonight.

I made a LOT of kebabs yesterday, so we may be having that again tonight ..not sure just yet. I can't seem to get caught up on all my chores ..and I think it's cuz I can't completely kick this stupid migraine I've had some form of for the last 2 weeks

Happy Anniversary BB!!

I decided that I will make pigs-in-blankets withthe hot dogs. That way I can have left over mashed potatoes and veggies and they can have the nasty mac-n-cheese.
