Hey Grandpa, What's for Supper? Part 2

What is it with you guys? First it was Italian night all at the same time. Now it looks like it's bean night. Why am I not getting the memo?

It's early and I haven't even had breakfast yet so dinner is waaaaay off in my plans for the day. Whatever it is, it'll be simple.

Ok! I am for sure making skands corn chowder. I have the potatoes boiling now. Also as a side I decided to try homemade mozzerella sticks. This is a first so we will see how they turn out.

I made some Jambalaya last night .. chicken, sausages .. all that good stuff

Tonight.. I think I'll make some Parmesan Crusty Chicken .. Mac 'n Cheese (the real deal) .. and some veggies of some sort

Might have to put on a (crock) pot of beans, too. I feel the urge to make cornbread with cottage cheese, corn, jalapenos and that.. yeah.. that's what I want...

So tonight, we had fish n chips, with chunks of extra sharp cheddar cheese. I soaked mine down in malt vinegar.
Going to do baked beans with lil smokies tomarrow. Will be good to have an idea of Sunday dinner with enough time to not have a spaz attack! Going for full grocery shopping after church tomarrow. Wish me luck! Taking both girls is always an ordeal. It's like they see me freaking out over keeping up with them, dodging the motorized old people that need new eyes before driving those carts, then they decide to act up in the worst way, being super whiney..

Chili, cornbread, salad and pistachio pudding cake tonight.

We had 2 feet of snow in less than 24 hours, so today was spent repeatedly shoveling and snow blowing. We're expecting another 6 inches tonight.

Aneesa - I've never made cornbread with cottage cheese, I usually use cheddar. Can you taste the cottage cheese or does it just keep the bread moist and creamy?

cknmom - I just saw the Hilshire Italian for the first time. Is it any good? It's on sale this week and I was debating if I should try it.
 
happyhen.. the cottage cheese just makes it moist (too moist.. imo.. if you don't let it drain in a sieve or something beforehand). I don't usually add that much either ..couple Tbsp., give or take.

When you add Cheddar, do you put chunks or shredded? I may have to try that..

Pistachio Pudding Cake sounds good... yummm

Aneesa - I use either grated or very small pieces. I like the chunks since they don't fully melt when baked, and the flecks of cheese look pretty with the corn and jalapenos.

The cake is my DD's favorite. DS love lemon pudding cake, so that's next.

happyhen-we LOVED it! It has good flavor. I like johnsons better still, but I love keilbasa.

We were out all day scouting a 300yd range for target shooting, got back late and were getting telescopes set up for skygazing tonite. So I made stew with leftover pork ribs, carrots, potaotes, celery, onions.It was very good and quick, DGD had thirds! We will be going out to gaze soon.

I have been thinking about this article I tore out of a woman's mag(family circle, woman's day, better homes and gardens) many years ago. It was about a family of 6 that ate 7 dinners for 1.75 each!
They cooked all day sat, and froze most things for the rest of the week. I made this a few times, raved about it so my mom asked for the recipes. Her fax was broken so I sent her the pages, SHE LOST THEM!
I have done searches on all the mags. sites in the archives with no luck.

I can remember parts of it; onions, celery, carrots, zucchini.
Add some kind of tomato(sauce, diced??) divide in half. One third you added hamburger to then divided that in half, you made chili out of one part and spaghetti sauce out of the other. But you also made another meal each using the chili and sauce. The other part you mixed with raw hamburger and made salsbury steaks and something else.

The meals were good and froze and reheated well. It only took about 3hrs. one day to make everything.
Does anyone remember this article? I am going to try to come up with something like this. DH is barely working right now and I need to REALLY cut back on food costs.
