Hey Grandpa, What's for Supper? Part 2

Last night we had Monster Pasta to celebrate the season, of course. Giant pasta shells stuffied with Ricotta, and a sausage-pepper spaghetti sauce, decorated with olives and pimento for faces. I thought it was just ok, especially since it wasa lot of work to prepare, but my adult son really liked them.

A few nights ago we had pumpkin sloppy joes. Again, I thought they were just ok, but the guys liked them. :/

Tonight I will grill a T bone steak and serve it with summer squash, sweet corn (cooked and cut off the cob), and mac n cheese.

I've been craving our low-carb pizza so made two for dinner. If you're low carb or gluten free you might give this a try. The texture is not like bread, but the flavor is amazing. It's a fork pizza, not a hold in your hand pizza...

4 ounces cream cheese, softened. The recipe is for plain, but we buy the chive and onion for bagels and that's what I use.
4 eggs
1/4c. whipping cream
1/4c. parmesan (the kind in the green can, the cheap stuff)
Italian seasoning to taste

Blend the above until smooth. Add 2c. shredded pizza-style cheese and stir. Pour into 9x13 pan and bake 375 for 20ish minutes, until set. Top with sauce, toppings of choice and a little more cheese--go easy cause there's already a lot in the crust. Bake for 10 minutes, let set a few minutes and serve.

Lemon pepper/Adobo roast chicken, green beans, and baked potatoes - gravy of course.

Edited to add:
If Heaven doesn't have pig cheeks, mashed taters, milk gravy and corn, I ain't sure I wanna go!
