Thanks for the well wishes, everyone.. I am not too much better, but my Rx is refilled, so I'm prepared for the worst.
I managed to cook some food today ..and I made a cheesecake for DH, so I can relax again ..sort of.
I put a about a lb. of ground beef in the crock pot (frozen, even) with some dry savory spice and let it cook until it was no longer frozen ..partially cooked. I shredded/chopped half of a large head of cabbage, half of a small onion, a small red bell pepper, several Crimini (brown) mushrooms, some fresh garlic, a few sprigs of fresh thyme and one sprig of oregano, some nutmeg, a little cinnamon and all spice ...and 3+ T. of tomato paste mixed with 2+ T. of greek style yogurt. Simmered all of this until tender ..oh... and a tsp. or so of sea salt, dash of red pepper flakes and a few grinds of fresh black pepper.
I boiled up some Campanelle ..cuz I have no energy to make fresh noodles yet... and tossed them in a little bit of butter before I added them to crockpot.
While everything simmered in the pot, I roasted new potatoes in 3 colors and a white yam, peeled and quartered also ..with olive oil, fresh garlic, rosemary and parsley from the backyard.
I like it ...comfort food ..easy food. We'll see if DH likes it when he gets back.... or he can fill his face with cheesecake.
happyhen.. my sandwich bread is the basic wheat bread recipe in my machine's book... I just add a few pecan pieces, sunflower seeds, and fennel/cumin/fenugreek whole seeds to the mix and it makes a nice "nutty" bread that is tasty just toasted or with various sandwich fixin's, as well. If you need detailed ingredients, I'll try to post them tomorrow ...head and neck are telling me my quota has been reached
