Hey Grandpa, What's for Supper? Part 2

Aneesa I hope you are feeling better this morning!


Tonight is taco night in town so I am off the hook!

Last night I did my chicken and rice dish. I usually use minute rice. Last grocery trip I bought regular rice to save $. It got really sticky. I followed the directions, I think! Then I remembered I used reg rice 20 years ago and the same thing happened! What might I be doing wrong?

Any tips or ideas!? Thanks!

Did you try rinsing it first? If you haven't tried that, it'd be worth doing so to see if it makes a difference. The minute rice is parboiled, so it would have already gone through a rinsing. When I make the Persian rice (which is meant to be fluffy and not sticky) it is soaked for a bit and then rinsed.

I don't yet know what I'm making for supper. I'm looking for some inspiration. If all else fails, I'll make salmon.
 
It's my birthday...hubby made me breakfast in bed and is cooking a roast and veggies in the crockpot. He also purchased a chocolate truffle cake and vanilla ice cream. I'm a lucky gal.

Happy Birthday Redfeathers!! Sounds like you're being spoiled, which is just as it should be!

I finally found some inspiration for dinner. I'm making a chicken and mushroom dish which will be served over egg noodles. Buttered peas and fresh home baked rosemary bread will round out the meal.

Backyard Buddies I didn't rinse it, the package said not to but I will next time. Maybe I will soakit for ashort while as well. Thanks for the tips!

I felt like cooking today ... just couldn't decide on what. So we had tapas.

Potato tortilla
Spinach and chickpeas
Sherried mushrooms
Stuffed cherry tomatoes
Garlic prawns
Manchego cheese
Serrano Ham
Fresh fruit

Lots of crusty peasant style bread and a glass of very robust red wine.

Yum happyhen! Why didn't you tell us sooner? I have a loaf of bread in the oven and haven't started making my dinner yet. I would have brought the bread and another bottle of wine!

thechickenchick - I love mushrooms too, as do all my family members except for dd. She's good about it though and will pick around them. Just leaves more for the rest of us.

I was thinking of using up left over roast chicken to make pot pies. But now I feel too lazy, so maybe just left over chicken in cream of mushroom soup over rice, with homegrown frozen corn or green beans.
Last night I sauteed mushrooms and shallots and added sliced left over pork roast. I also made rice using the juice from homemade salsa as the liquid. It was a yummy combination. We had a salad made of greens I picked in our field and garden. I made thousand island dressing using our own sweet relish.
