Hey Grandpa, What's for Supper? Part 2

DH calls Roast Beef - Stringy Beef and he doesn't like it. I love Roast Beef with all the trimmings. Roast Beef Hash the next day made from the left-overs, yum!
Cook a nice eye of the round roast that is well marbled up to about 135F.

It is not stringy! and sliced thin makes good sandwiches
 
Yesterday was lentils cooked with ham bone and chunks of ham (leftover ham from Easter). We served it over rice. It was a delicious, yet simple meal.
I'm not so sure about today's dinner yet. I'm stuck in my home office all day, so it will need to be another simple meal or DW may decide to get creative. She's burdened with the kids and house chores though, so I'm not setting my expectations high. We might just have hot dogs... I did manage to get a decent breakfast of sausage links, eggs and a slice of bread.
 
Yesterday was Chinese delivery. Sesame chicken, Mongolian beef, beef chow mein, chicken fried rice and pork egg rolls. It sure was tasty, and we have leftovers for lunch. DS actually decided he wanted Chinese leftovers for breakfast.
