Hey Grandpa, What's for Supper? Part 2

Tonight we had sesame ginger turkey breasts, sliced potatoes baked with it, stuffing and gravy. I know I did poor in the veggie department but I was rushed.
 
I have a big bag of snow peas that I picked last week. I want to figure out a meal around them. I love shrimp with snow peas, but don't have any and am not willing to go and make a special trip to the store just for that. Guess I better check the freezer and see what might work with them. Anyone have any ideas?

Lemon bars sound good! I should make some. We have two lemon bushes loaded fruit.
 
last night I made turkey rice soup with the left over turkey breast and frozen rice. I had a box of chicken stock in the pantry already. Today is no real holiday for us as far as picnics or anything so Im not sure what we will have tonight.
 
Happy Memorial day. Is everyone BBQing? We are having hamburgers, Brats, tater salad, pasta salad, baked beans, devilied eggs, cake and smores. Whew....I didn't realize how much we were having until I just now listed it all.

We're BBQing here today, but not the typical fare. Since we had a celebration BBQ for my sister's college graduation yesterday (steaks, ribs, watermelon, beans, and potatoes) we're having a healthier version of a BBQ today - Ahi Tuna, brown rice, and cooked spinach.
 
Well SO beat me to the stove last night, so we had baked chicken breast and potatoes for dinner, with a green salad with hardboiled eggs, green onions, croutons and gabanzo beans. SO made chocolate cup cakes for desert.
So we are having my oriental snow pea dish tonight. I am sauteeing the thinly sliced beef in olive oil with some sesame seeds. i am adding carrots and snow peas. Then I'll add the marinade of ginger, garlic, honey and soy sauce and let it steam. just before serving I will thicken the sauce and add green onions. I have already cooked the rice.
This afternoon I used over ripe bananas that FIL had brought by yesterday to make banana bread. My recipe calls for wheat germ, which I don't usually have in the house since it goes rancid before I use it up. I substitute oatmeal. I feel it is a good healthy alternate and gives a nice flavor. I also ground up some whole wheat to add to the flour mixture and used the lemons from one of our lemon trees.
We usuall don't have to buy sweet treats, since FIL brings us so much. He either buys it for us, or gets it free (when it is beyond the sell date). If we actually ate all he brings us we would be huge and very unhealthy. I don't know why he thinks we need to have that many sweets? I suspect he gets them, because he wants them, but he is not supposed to eat any of it.
I rarely eat sweets; I stay away from processed sugars and processed carbohydrates. SO eats maybe one or two cupcakes, but doesn't even have that every night. Stepson is rarely home, so he doesn't eat them. Most of the time we throw them out, because even the chickens don't eat them.

If we eat sweet treats, I'd rather have them be home made, because then I can put good healthy stuff in them and keep the unhealthy chemical stuff out.

FarmerDenise - That's funny about your FIL. I suppose there are a lot worse things he could be pushing on you. Perhaps you could get him bringing these sweets to a rest home or something.

It has been a busy week and it appears that it has for the rest of you as well.

Tuesday was turkey meatballs over mashed potatoes, gravy, and steamed green beans.

Wednesday was Breakfast for Dinner (did anyone else have B4D that night???). The kids were inspired by "Chef Julian" (Google it) and figured that if a 5 year old can make scrambled eggs with cheese, they could as well. So, that's what we had - scrambled eggs with cheese and green onions, toast, and juice - all made by the kids.

Tonight will be simple since my daughter has a performance tonight. It'll be BBQed chicken sandwiches and broccoli slaw.
