Hey Grandpa, What's for Supper? Part 2

I like the idea of using Brussels sprouts greens! I planted collards this year but have never used them before.
I stripped the stems and then cut the leaves into squares roughly 1.5"x1.5". Pile them in a pot some chicken stock, piece of smoked pork or turkey, onion, garlic, salt and pepper. You could add more seasonings to suit your taste. I toss in some Cajun seasoning I mix myself. Simmer that pot for an hour or two, and then eat.
 
I use brussle sprout leaves as salad greens also
Really? I feel they are too tough. First time growing brussel sprouts here, but the leaves are tougher than kale, more like thick cabbage leaves. I guess I could julienne them and do an Asian style salad (often julienned cabbage for the base) or a yankee slaw (vinegar based dressing instead of mayo based because mayo is gross in my book).
