I stripped the stems and then cut the leaves into squares roughly 1.5"x1.5". Pile them in a pot some chicken stock, piece of smoked pork or turkey, onion, garlic, salt and pepper. You could add more seasonings to suit your taste. I toss in some Cajun seasoning I mix myself. Simmer that pot for an hour or two, and then eat.I like the idea of using Brussels sprouts greens! I planted collards this year but have never used them before.
