Hey Grandpa, What's for Supper? Part 2

Scalloped potatoes and ham, peas, and biscuits. Overjoyed that I can eat potatoes again, in moderation and after leaching them for a few hours, but who cares? Nephrologist did say that the Simply Potatoes were fine - they are just slightly pre-cooked and there’s nothing in them but potatoes, so we use them a lot. So many cuts of them….hash browns, wedges, diced, homestyle sliced - so I can usually find something. But the stores are all out of them at the moment, so I had (got) to use fresh.

Me too!! I don’t overindulge, but I’ll do just about anything to avoid hitting the stage where they start talking dialysis and/or transplant, which is a GFR of around 15. Mine tanked at 19 back in March, too close for comfort, especially given that I’ve already directed that I’m refusing either. Now I’m back in the upper 20s, with a couple of GFRs in the low 30s even. Maintaining numbers is a….well….it’s a numbers game. Up, down, up again. Being able to indulge in a few potato dishes from time to time, or a juicy orange, makes it a little easier to stay on track the rest of the time.
 
Covid threw our sleep schedule for a loop, mine especially. Now that we are all recovering, I intended to order either pizza or chinese for dinner. I feel asleep though before 5pm and then write up around 8pm and everybody else was sleeping. So I hope they ate something for dinner. I heated up a bowl of leftover lentils and had some chips and queso a bit later.
