What did you end up doing with all those chicken breasts? I typically buy a lot of breasts all at once, so when I defrost them, I also have a lot. Usually, I'll use one part of it in a recipe and then boil the rest of it. The boiled chicken can either go back in the freezer, but more often than not, it makes a reappearance as chicken salad, curried chicken salad, Chinese chicken salad, soup, or a pasta dish of some sort. Sometimes I'll grill the extras and freeze.
The stuffed Zukes turned out well. I just kind of winged it - scooped 'em out, gave the seedy sections to the girls, chopped up the rest of the innards. I zapped the boats for a while in the micro to soften. Sauteed some sausage with red onion and the zuke trimmings, threw in some parmesan cheese, Italian bread crumbs, an egg, and mozzarella cheese. Then I put some prepared spaghetti sauce on the bottom of a baking dish, topped with the zukes, and stuffed 'em with the goodies and baked, first covered and then uncovered. It was really good, especially for a dish without a recipe.
I served it with garlic bread and a salad of fresh cut tomatoes, fresh grown red onion, red and yellow peppers, fresh basil, in a vinaigrette.
