Hey Grandpa, What's for Supper? Part 2

Thanks Dragonfly Ranch! I've printed it out and can't wait to try it. I agree - Allrecipes is a GREAT site! It's my go-to place when I want to find a recipe to try or if I have several ingredients and want to know what I can whip them up into.

Can't wait to try this one. I think I'll bake up several and pass them along to the neighbors.

Thanks for the well wishes to the head ..I'm waiting to see if the oral Imitrex is going to help... but I really need an injectable, for this one.

Food will be take out or something fast and easy. I'm open to suggestions.. but I still need it to be fresh and/or preservative, artificial flavor/color free... and nope, DH is not keen on B4D

AM how are you feeling today? Better I hope!

I had to cook some pork chops that had been thawed out a few days. DH changed his mind the other night

! I also made a rice dish for a side. Nothing from a recipe just threw some things together, including carrots, onions and peas from our garden.

So tonight is B4D! I am going to do the Dutch Babies and fried taters!!

Tomorrow we are leaving for camping so I will be off of here til Monday.

Unless DH decides to bring the laptop with us.

Have fun camping, thechickenchick! Is this tent or RV camping? When you get back you'll have to share with us all the good camp food you made.

For dinner tonight, I'm going to be making a stuffed ginormous zucchini that my neighbor gave me. I'm still searching for ideas, so if any of you have a good recipe, please share.

thechickenchick.. I thought I was home free today.. then the beast crept back up on me, but I'm definitely accustomed to them being a daily invasion (almost) ..so I'll work it out.... and thanks for asking after me

Enjoy the camping trip!

I found chicken breast thawed out, so whatever dinner is.. it's gonna be with those. I can't waste 'em..

..and there's enough out to be 3 different meals... blah! (Maybe "someone" was feeling like they might get adventurous and then flaked.. "someone" .. )

I'm sorry to hear that you're still not feeling well, Annesa's Muse.

What did you end up doing with all those chicken breasts? I typically buy a lot of breasts all at once, so when I defrost them, I also have a lot. Usually, I'll use one part of it in a recipe and then boil the rest of it. The boiled chicken can either go back in the freezer, but more often than not, it makes a reappearance as chicken salad, curried chicken salad, Chinese chicken salad, soup, or a pasta dish of some sort. Sometimes I'll grill the extras and freeze.

The stuffed Zukes turned out well. I just kind of winged it - scooped 'em out, gave the seedy sections to the girls, chopped up the rest of the innards. I zapped the boats for a while in the micro to soften. Sauteed some sausage with red onion and the zuke trimmings, threw in some parmesan cheese, Italian bread crumbs, an egg, and mozzarella cheese. Then I put some prepared spaghetti sauce on the bottom of a baking dish, topped with the zukes, and stuffed 'em with the goodies and baked, first covered and then uncovered. It was really good, especially for a dish without a recipe.

I served it with garlic bread and a salad of fresh cut tomatoes, fresh grown red onion, red and yellow peppers, fresh basil, in a vinaigrette.

Yum!

Try my reuben pizza! I use this recipe for parties.
Pizza crust (scratch, mix or ?)
thin sliced corned beef, cut into strips then into smaller pieces
sauerkraut--drained and patted dry
cheese topping
pizza or spaghetti sauce
caroway seed

Put sauce (with some caroway seed sprinkled on it ) on the pizza crust. Next the sauerkraut evenly over the sauce. Sprinkle on some more caroway seed. Then place the meat over the kraut. Lots of cheese over the top. Oven at 375 degrees about 18 mins.
Some like 1,000 island dressing between the meat and cheese. The crust can be soggy, I usually use a pizza pan with holes in it. You could put it right on the rack without a pan to crisp the crust.

Yummmmm Carrie
