I know, I know..... My DH has offered to teach me time and time again. I always say that I am almost 40 and I have never needed to know how, so why now? The truth? I am a

!!!!!!!!!! I can't parallel park or back up to save my life. My Dad didn't have the patience and my first DH was a yeller. So I panic when being taught new things. My DH is a very sweet man but he gets agitated too. He has been driving on the farm since he was 7, so he thinks everyone else should be a natural at it too. He promises he will be kind if I just let him show me. Tell ya what, I will ask him to TRY to teach me!!!

I have spent all day preparing for camping tomorrow. DH could not make up his mind until this morning so I have been busy. I like to have most of the work done so I have more time to relax while we are there.

So far I have made a macaroni salad, an Italian pasta salad, baked beans, bean dip, egg salad sandwich spread and a pan of lemon bars. Now I need a plan for supper. I am thinking pork stir fry.

Teach yourself, thechickenchick! I did it.. you can do it! My 1st husband was a yeller and insulter.. so he couldn't teach me. My father never tried to teach me.. even on an automatic.. and my brothers are all younger than me, so I taught them! LOL

When I had to learn to drive a stick, I got in midday traffic in Berkeley, CA ..and did it! I even had a brace on one of my ankles, at the time... but I was determined. I got cursed at a little bit.. haha.. but I did it!

You can do it!! If you need pointers, feel free to pm me or I'll even give you my cell # and talk you through it

Awww! That is so sweet of you! I just might do that. We are leaving to go camping tomorrow. I might just try next week. I will let you know. Thanks!

Like Annesa's Muse, I also had to teach myself thechickenchick. It's not THAT bad, really it isn't. And, I've driven stick in hilly San Francisco, so you can totally do it in the quietness of your farm. Sure, you'll stall quite a few times at first, but you'll figure it out. Even though I haven't driven a stick in a number of years, I could do it now. It's just like riding a bike - once you know how to do it, you know how to do it.

Dinner tonight was an easy one. I was back and forth today - to take DS to band, to pick up DS from band, to take DD to a middle school luncheon, the grocery store (finally!!!), etc. So, dinner tonight was BBQ'd burgers and corn.

No real idea for dinner last night. So opened pantry and frig and came up with this. It turned out really good and was a "10" on 1-10 taste scale.

Here is what I had:
1) four small boneless chicken breasts
2) small can of tomatoes with diced green chilies
3) Four Pasilla peppers
4) package of Spanish rice mix
5) 4 fresh Tomatillos from the garden
6) cheddar cheese

Used four ramekins. Boiled the chicken breasts until cooked through. Spread equal amounts of the tomatoes in the bottom of each ramekin. Roasted and peeled Pasilla peppers; split open removed seeds, stem, cut 1/4 of pepper off - set aside - and laid 3/4 of pepper on top of tomatoes. Chopped up Tomatillos and cooked with with Spanish rice.

Once the chicken was cooked put on top of pepper, equally divided cooked rice/tomatillo on top of chicken. Put reserved pepper on top of rice then covered with cheese. Baked until cheese was melted and golden brown.

YUMMMMMMMMY!!!!

DS came home this weekend. So I started a big pot of spaghetti this morning early. I feel like I am missing something, but I make it so seldom that I have no idea what it could be?? Oh and I baked some bread sticks too!

I hope you all had a great weekend!

thechickenchick - Did you figure out what it is that you're missing?

We're having spaghetti tonight as well. And, we might have roast tomorrow, ~*B*~ !

Dragonfly Ranch - Your pantry recipe sounds yummy! Sometimes those are my favorite dinners. I often do soup that way, but I'll have to try your version next time I'm wondering what to make.

We had spaghetti last night also!! I made meatballs with ground chicken I had. I wasn't sure how they would taste, but we all really liked them.

Tonight will be something with hamburger, haven't decided yet.

I will be making tortillas, an apple dessert also today.

Ha ha ha ha ha. I guess Monday was Spaghetti Night.

I was going to make a roast tonight, but I think I'm going to make grilled pork chops instead - probably marinated in concoction of maple syrup, Dijon mustard, and a few other goodies. That could change, though.
