Hey Grandpa, What's for Supper? Part 2

I'll do something with the leftover lamb-don't know what yet though.tomorrow will be 15 bean soup with the ham bone from Christmas and polish sausage. I need to make dessert also. DH wants choc. cream pie, I will fix something else for me.

Hubby gets leftover bratwurst and saurkraut(sp?). I learned a way of making it that isn't so sour/tart and sometimes I end up craving it for days. I drain all the juices from a jar of saurkraut then I put the drained kraut in a pot and add chicken(or veggie or beef) stock to it with some caraway seeds. I put the bratwurst in with the kraut and let it simmer until all is heated through. Mmmm YUM!
 
I'm at a loss for dinner ideas. I'm trying to make healthier food and not spend much money at the same time. The problem is nothing sounds good. I'll have to check in on this thread a little later and see if anyone has posted anything that sounds inspiring.

Beans can be healthy and very inexpensive, so adding a bean meal here and there can really cut costs, especially if you buy them dried and use a pressure cooker to make them.
 
DS wants me to teach him how to make Chicken Cordon Bleu so that and rice are on the menu tonight!

BYB I wish my DH liked soups more. I love being creative with soup ingredients. I like to start the crock pot first thing in the morning and continue to add yummy stuff all day long

we were sick with a bad 24 hour bug and feeling a little better so the idea was something light and easy to keep down.

2 cans chicken broth
1 can great northern beans
1 chicken breast cooked and chopped
hand full of broken linguini noodles
salt, pepper and onion
3 baby carrots sliced thin

delicious and stayed down.

Just generally more healthy meals would be nice. More veggies, less fat, fewer carbs. I really should be cutting back on my carbs (per doctors advice). Tonight I decided to make orange chicken breast baked in the oven and not breaded. I also made some asian flavored broccoli and egg noodles. I'll only eat a small portion of the noodles.

I love black beans and have been eating them quite a bit lately. I made some really good vegetarian chili last weekend. I am always open to more ideas though.
 
Last night we had Navy Bean Soup with one of those small ham steaks and whole grain cornbread using a medium grind cornmeal from Red Mill (it left crunchy bits in the bread) and while whole wheat flour....husband would have preferred Jiffy Muffin Mix, I'm sure.

Usually I just use the beans, onions and ham but last night I threw in a couple cups each of chopped celery and carrots. It was very good.
