What kind of "healthy" are you aiming for? Are you looking for low-fat, low/no meat, more veggies, or ???? We really try to eat healthy here - lots of soup, fish, chicken, salads, whole grains, etc., but my recent challenge is to cut out some sodium (we Americans eat waaaaay too much and high blood pressure runs in my family) so I've been experimenting with recipes. Soups, especially, have been a challenge, and I normally make killer soup. Last night's corn chowder was meh.
Beans can be healthy and very inexpensive, so adding a bean meal here and there can really cut costs, especially if you buy them dried and use a pressure cooker to make them.
Just generally more healthy meals would be nice. More veggies, less fat, fewer carbs. I really should be cutting back on my carbs (per doctors advice). Tonight I decided to make orange chicken breast baked in the oven and not breaded. I also made some asian flavored broccoli and egg noodles. I'll only eat a small portion of the noodles.
I love black beans and have been eating them quite a bit lately. I made some really good vegetarian chili last weekend. I am always open to more ideas though.
