Hey Grandpa, What's for Supper? Part 2

Flattening under a weight - I used a patio block - 8"x10"' by 2" thick - is like pounding with a mallet.
The thinner/flatter bird cooks faster so it doesn't dry out.
15min on side one - skin down - then flip it over, replace the weight and grill for another 20 minutes until it tests done.
Yummy & moist chicken, even the white meat, with a nice crispy skin.

You can do chicken breasts thsi way too but I like the dark meat so I did the whole fryer.
Plus it cheaper buying it whole

Last night was French Toast. A bit different in that I used thick slices from my homemade English Muffin Bread. I have found a secret for best tasting French Toast. - Instead of milk with the eggs for the batter I use Buttermilk and add vanilla as usual. It gives the toast a wonderful light tang that pairs wonderfully with the sweet of fresh berries from our garden and bit a syrup just for the maple flavoring. It is fast becoming our favorite B4D once a week.

This sounds very interesting. I just might have to try it. Hubby will think I have lost my mind, again!!

Last night hubby BBQd some deer sausage we made and we had baked beans on the side.

Update on DS, he is still in the hospital. They sleep deprived him last night as part of the testing. So his Dad stayed with him, he is a night owl, and I am nodding off by 9:15

He will probably come home today but nothing is for sure yet.

DawnSuiter - That looks really good! Being a So. Cal gal, anything with a Mexican/Southwest flair is considered to be good eatin'! But, when a lot of it comes fresh from my sun-kissed So. Cal garden, it's even better! I can't wait for my veggies to be ready. I've been out in my garden counting all the green tomatoes on my plants every day. Can't wait for the first one to turn red/orange/pink/black/striped

which is entirely my fault that it's not because I got a late start planting my garden this year.

Dinner last night was a roast chicken (I combine two recipes at allrecipes.com), brown rice, and sweet baby peas.

thechickenchick - Thanks for the update on your son. I hope that your hubby and son hold up OK today and can find some time to make up for the lost sleep. Please keep us informed. I hope there's good news!

My husband went to a small Farmers Markets market that we have in our area and traded some our of "boot leg" jelly for tamales. So we had a simple Birthday dinner of tamales and Spanish rice. I made 3 Boysenberry pies before dinner. Two for the freezer and 1 for eating now. Only problem it was too hot to eat last night.

Pizza tonight as usual after husband gets home from fishing. That's OK will give me time to get started on the mile long list of "to do" this weekend.

Have a great weekend everyone. Making homemade Hamburger buns tomorrow morning so looks like there are Portabella Mushroom burgers in our future.

I know it is the middle of summer but I have a big pot of chicken parts with onion and carrots simmering their way into being stock. I had an enthusiastic, but sadly not very good, cook here over the weekend who BBQ'd a bunch of chicken legs and thighs. The seasonings and sauce were superb but they didn't get cooked to the middle. I think they will make very tasty chicken soup. There's a nasty summer cold going around here and soup soothes sore throats.

That is an awesome idea! I bet it will be super yummy! I use my crockpot all year round. It heats up the house less than an oven. I have a baked beans recipe that you just throw everything in the crockpot for over night and wake up to a heavenly smell

I could not live without my slowcooker/crockpot!!
