Hey Grandpa, What's for Supper? Part 2

Last night one of our favorite summer meals - "Bread Salad" Basically, two day old bread in this case I used Pesto Bread that I made over the weekend, lots of fresh tomatoes, celery, cucumbers, red onion, Kalamata Olives, Spanish Olives and a simple Olive Oil and Wine Vinegar dressing. So refreshing.

This is one of those salads that is a bit better when chilled. If you are pushed for time can can't make it an hour or so before eating - like I was last night we didn't eat until 10:00pm - I throw it in the freezer for about 15 minutes before we eat. Also great the next day for left overs, gives time for all the flavors to meld together.

Oh! one last thing make sure you use basil and if you want it a little on the Greek side some Feta cheese crumbled in.

That you did!! You could do what I did last night, veggie stirfry. I was not feeling well and on top of that was gone most of the day. So I just cut up a bunch of veggies and served it on top of rice I had left over from the night before. DH didn't even notice there wasn,t any meat in it

OK true confessions - Had this salad leftover for lunch today and the Pesto bread which was real good last night got a too soggy today.

I have always made this salad with Sourdough French Bread but when the Pesto was OK last night I didn't think anything of it until my first fork full at lunch - so my suggestion use French Bread. The second confession even though it was soggy I ate it all anyway.

I bet it was still yummy! I can't wait to try this. I bake a lot of bread so this will be a handy way to use up that leftover loaf.
