I was lazy too. I hang my head in shame. We had hot dogs and boxed mac and cheese. Though the hot dogs were LOADED with good stuff. (onion,tomato,cheese,pickles) It was actually pretty tasty....

the box mac and cheese is no where near as good as home made, but it was just one of those days.

Tonight will be -

Pork tenderloin cut into thin slices cooked in my cast iron pan with onions, garlic, tomatoes and peppers until the meat is tender and the juices make a gravy
Refried beans
Basmati Rice
Salsa from the summer I put in the freezer
Flour tortillas
 
Tonights Supper Menu is:

Grilled Thick Cut Pork Chops seasoned w/Caribbean Jerk seasoning.
Yellow summer squash
Mustard Greens
Crowder Peas
Corn Bread
Cold Sweet Milk

While laying ceramic floor tile!
 
Want to know something funny? My husband is one of those ppl who could careless about food. He eats what I cook. No preferences. No particulars. Food is a means to fill his stomach. He wasn't raised with meals being social or the social customs of eating. Nor was he raised with a tradition or heritage of food making memories with big family gatherings or aunt betty's pie or aunt sue's cake or uncle john's BBQ. He is not southern and can't understand the social customs of gathering and eating. He doesn't understand the finesse of food and entertaining either. He is skinny and lean and if I didn't make him eat at least once a day he could go for a couple days without eating.

Crazy huh?
 
I know what you mean about your husband. I think the southern culture is responsible for the way we think about food and family gatherings. Seems like no matter what the function, it is somehow centered around food. Is that a bad thing? I don't know but it sure is fun. Don't you just hate those people that can eat "like a horse", anything they want and as much as they want, and never gain a pound.
I gain weight simply reading a cookbook. It's a constant battle and I'm losing.

A good corn casserole is one of my mnay weaknesses. Was just hinking today that it was time to make one. Care to shate your recipe with us? I would like ti improve upon mine.

I like to do a corn casserole along side of a chicken and spagetti casserole that I do. Somehow they just go good together.
