hiddenmagnolia - Some of the MREs aren't bad, but after eating them for almost every meal and for such a long time, then they get old real fast....lol We went through that after Katrina and I hope that we do not have to do so again.

Tonight is homemade spagetti sauce and homemade french bread. I had a few large tomatos starting to go bad so I made a seasoned tomato sauce out of them. I have to go to the vet AGAIN so I will throw it in the slow cooker so it is warm and ready when I finally meet up with my family around 8 tonight!

Speaking of which . . .
I made too much rice last night, so tonight's dinner is fried rice with veggies and other leftovers I can scrounge out of the fridge.

I used a new sloppy joe recipe last night that everyone loved. If you don't have bread or buns it would be good on cornbread or mashed potatoes, or maybe on top of crunchy french fries! I liked it because it called for all the things you would normally have on hand, and it was very simple. If you want to try it, I would be happy to post it. Hang in there! Its mother hubbards cupboard around here too!!

Edited to add... Sometimes it helps to know that someone else has been in the same place as you, and it gets better. Also my Mom always said there is always someone else worse off than you. So be thankful for what you have, even if its not much.

I am going to make a Moroccan dish...

Tasty! Try it!
Meatballs in Tomato Sauce with Eggs

1-1/2 pounds ground beef
1 onion, very finely chopped or grated
3 tablespoons finely chopped fresh parsley
a pinch of chili powder, or to taste
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1 teaspoon cumin
vegetable oil for shallow frying (a couple tablespoons)
6 eggs
salt and pepper

For the Tomato Sauce:

2 onions chopped
2 tablespoons olive oil
2 cloves garlic, minced
24 oz of canned diced tomatoes with juice
1-2 teaspoons sugar, to taste
1 small fresh chili (I did not use)
3 tablespoons chopped fresh parsley
3 tablespoons chopped fresh cilantro
Salt to taste, about 2 teaspoons

First make the sauce, using a large skillet with a lid.
· Fry the onions in the oil until soft.
· Stir in garlic.
· Add tomatoes, sugar, chili(if using) and salt
· Mix well and simmer uncovered for 20 minutes, until the sauce has reduced and thickened.
· Meanwhile, make the meatballs.
· Mix together the meat, onions, parsley, spices and some salt and pepper and gently knead to a soft paste with your hands.

· Rub your hands with a little oil so that the meat does not stick, then roll the mixture into marble sized balls.
· Heat a thin layer of vegetable oil in a large frying pan and fry the meatballs briefly. Turn the meatballs to brown all over. They should still be pink inside. When browned transfer to paper towels to drain.
· Add the parsley and cilantro to the sauce.
· Add the meatballs and simmer for 5 minutes, until they are coooked through.
· Break the eggs over the sauce, put lid on skillet and cook until the whites have set.
Serve with lots of bread. I used toasted Bouille. Sourdough would be good too. Or you can put over pasta.
Serves 6

I would love the recipe! And believe it or not, I could put hot dogs in anything and my family would eat it! Everytime I go to the store and the weiners are 99 cents, I buy about 10 packages. And that will last 2 weeks. Oh, we have 3 teenagers!

Bless you! We have 1 teenager. I can't imagine the cost of feeding 3!

CROCKPOT SLOPPY JOES
1 LB burger
medium chopped onion
2 garlic cloves( I used powder)
1 cup ketchup
3 tbsp worcestershire sauce
2 tbsp prepared mustard
3 tbsp brown sugar
2 tbsp cider vinegar
1 1/2 tsp chili powder

Brown burger and onion. Combine remaining ingredients in crockpot. Add burger and onion. Cook on low for 5 hours. It has a tangy rich taste. It was just enough for our family of 3, so you would probably have to double it. Let me know how it turns out.

Hot dogs, baked beans and coleslaw tonight. (0.69 per pack right before Labor Day. I have 11 packs left in the freezer!)

I think most of us are Mother Hubbard lately.
