Yesterday we had Mexican quiche and mixed fruit and toast for my birthday breakfast, my girls made spaghetti for dinner..turned out sorta school cafe style but still good and hey, it's the thought that counts anyway! And, of course, garlic bread, salad, cake and icecream

It's kind of dreary around here, today ...and I have some yard work to do ..bulbs need to get in the ground and my chicken coop is being renovated.... so I am pretty sure there will be crockpot chili tonight. Of course, there may be side "ornaments" too... fresh chopped onion, shredded Colby and sour cream ...cornbread.. and rice, if DH insists..

For a future meal.. does anyone have a "good" pesto recipe? I have plenty of fresh basil, asiago cheese and whatever else I need (or I can get it) ...but I want a tried and true recipe from you ladies

I'm doing a simple dinner tonight. We have a crazy schedule, with my daughter having music lessons after school. Needing something easy and being at Ikea for breakfast (where else can you get a complete breakfast with coffee for less than 3 bucks?) I picked up some Swedish meatballs. I'll whip up some mashed potatoes in a minute and just reheat them before dinner, plus put on some green beans and we'll be good to go.

Aneesa - here's my recipe for basic pesto. It makes about 1 cup:

3 cups loosely packed fresh basil leaves
1 tsp salt
3 cloves garlic
1/4 cup pine nuts
3/4 cup olive oil
3/4 cup freshly grated Parmesan

Combine the basil, salt garlic, nuts and olive oil in food processor and process, scraping sides occasionally, until smooth.

Add the Parmesan just before using.

My DH is spoiled too, (he married a classically trained chef!).

the chickenchick - halibut, yummm!

We had our first "wintry mix" day, rain, sleet, a few flakes mixed in, alternating with sunshine. Strange. So we had my signature dish, affectionately known at home as "chicken junk" with boiled tiny red poatoes I crisped in butter and sprinkled with parsley and baby sweet peas.
 
Last night was sort of an Itallian casserole with homemade french bread. Tonight we are going to town for tacos at the local eatin place! My DH loves taco tuesday because he can feed us, tip and all for $18 or less! We can only go every other week due to his work schedule so it is quite the occasion. The teenager loves it as it is usually the only time we eat out.

The chili ..more like Cuban style Frijoles Negros... was a hit!

Tonight, will do some Lemon Chicken or Sweet n' Sour (minus the bright yellow or red food coloring "kill me" additions), brown Jasmine and hoisin/garlic sauteed veggies ..whatever's in there

I'm making roasted bone-in chicken breasts with rosemary and garlic, brown rice, and cooked spinach. My kids are so silly. When I make cooked spinach, they think that it's the BEST dinner ever! I'm glad they've learned to be such healthy eaters with no fear of trying anything new.

We had a warm grilled chicken Caesar salad with bowtie pasta instead of croutons homebaked olive oil bread and fresh ripe pears for dessert.
