Aneesa's muse, How exactly do you make your Lemon-Chicken? My son LOVES lemon-chicken, I just do not know how to make it... Do you use a thick sauce or the runny thin kind?

Tonight I also made chicken N' Dumpkings! That is my FAV meal!!! yum yum!
 
Lanissa.. sometimes I make a thick and sticky sauce ..sometimes I cheat and get a sauce packet at Whole Foods or some place like that ...and some times.. I make a very unorthodox version

Tonight, was the unorthodox method..

Strip up the boneless breast meat, salt n' pepper, little splash of soy sauce, one heavy lemon rolled.. cut... and squeezed over the meat, a teaspoon of honey (or sugar), some cornstarch and some flour. Stir it all together until the meat is coated. Get the oil hot in a fryer or your deep fryer.. and cook until golden.

This version is much less sticky and sweet ...more savory and lemony, if that makes sense.

I still served it with steamed brown Jasmine rice and green beans with mushrooms, onions and garlic sauteed in EVOO with some sea salt.

DH said it was really good ..and he kept sneaking pieces while I was cooking

I bought a huge head of cabbage at a local market..the thing just won't go away even after two batches of cabbage soup....so we are making cole slaw to have with lunch and cabbage with homemade noodles for dinner...The chickens will get the rest.
 
Well, two nights ago we had blood (tomato soup with sour cream), guts (cherry crisp), and bones (biscuits shaped like bones, sprinkled with salt)...(i'm not saying how old I am....

)..dumb, but fun, and an easy cheap supper! Last night we had stone-fired pizza from a place we haven't tried...good, but expensive.
 
Chicken and rice casserole I think... with a veggie (most likely peas) to the side.

Nothing fun like going out and eating Mexican, or Japanese hibachi or Chinese General Tso's chicken ... ((drool))
 
I am rebelling against the menu I wrote ...so we're having smothered chicken, rice, green beans and a baked sweet tater..

....and I already started tomorrow's dinner in the crockpot ..chicken leg quarters with bbq sauce and onions, garlic, and a few large Yukon tater wedges. I'll figure out what goes with later

Make more veggies to fill everyone up.

This chicken was 4.5 pounds - a little on the small side, but it fed all four of us. (my kids are little so don't eat much at all)
 
I ate BBQ Burgers at a school function that my son was attending. It was nice to have something other than 'breakfast for dinner' on a Wednesday. Of course, the kids are already aiming to have it tomorrow instead.

Thanks Aneesa! I will be making this on Sunday when my family is all together! Hope I don't mess it up! lol.​
