I throw my left overs in a cast iron pan (going to take a lot of abuse). Fry the meat in a little bit of oil until some of it is crispy and the meat is falling apart, like pull pork. You'll end up with like a thick layer of chicken/oil on the bottom of the pan (needs to be scraped). I'll put this over rice, bread, potatoes or pasta.
