The cajun seasoning thing has spread from coast to coast and border to border. There are now more variations of "cajun seasonings" than flavors of ice cream. Everybody and his brother has jumped on the band wagon. Many of them are new to the public and will probably fade with time.
Then there are the old tried and true ones. Tony Chacheres
( pronounced: Sash cher eeeees ) is one of them and the one most widely used throughout Louisiana. Sub Way is now offering it on their sub sandwiches, if you can believe that.
Slap-Ya-Mama too comes in different mixes. I have a red and white box that has white pepper as opposed to red pepper. Matters not, it makes for a good seasoning. I'm not certain how far out the distribution of the seasonings have reached just yet. I shipped a box to Omaha before the holidays just for this reason.
And alligator tastes like alligator no matter how it's prepared. Frog legs taste like frog legs if you are eating bull frog legs. But if you are eating toad frog legs, well, now that is something else.
