I made tamales this weekend; one my favorites!
One is meat with red peppers, the others are chicken-cheese-green peppers.
This is one of the things I do with my pressure cooker....make meat or chicken for tamales, burritos etc.
And when I make the masa dough, I use light colored olive oil (yellow, not green), instead of lard. You honestly cannot tell, and it makes them healthier for us.
Did I mention how much I love tamales?
