Hey Grandpa, What's For Supper?

I'm trying something new tonight. I'll be making split chicken breasts with a sauce of lemon and dried figs. I've never fed the family figs before, so we'll see how well this one goes over!

I think I'll serve it with rice and a veggie.

Smart idea about cooking ahead of time!

I didn't use an actual recipe to season the chicken for the taco salad bar. I just tossed a bunch of chicken breasts into the bottom of the crockpot. I had some crushed tomatoes with puree (maybe a cup or so??), mixed in some taco seasoning, a large spoonful of chipotle salsa, added a bit of water, and dumped it all over the chicken. Midway through the day, I tore the chicken up a bit so that the seasonings could permeate a bit more. Turned out great! I think the leftovers will end up as burritos or enchiladas. They would be divine in taquitos, but that's a bit more fat than I'm wanting in our diet.
 
We just got our pig back that we bought from a local farmer:yiipchick. We are having home grown pork chops, mashed taters, gravy, greenbeans, or brocolie with cheese i am not sure yet and rolls with real butter. Yummy I love butter.

Dinner tonight - chicken breasts stuffed with a ricotta/spinach filling with a creamy pesto sauce, rice pilaf and asparagus; strawberry shortcake for dessert! Guess I better get to cookin'!

Funny, tho!

The kids actually liked the figs! Even hubby thought they were OK. I'm of the believe that you must throw new things at the family from time to time. If they reject it once, that doesn't mean they'll reject it the next time.

It was so hectic here today, that I finally just looked through the cabinet, and when I saw tuna, made a salad. It saved the day!

Are the figs everyone's talking about black, or green? We had a lot of fruit trees where I grew up, and figs were among them. The common ones we saw around were the black ones, but we also had a large one with light green skin, and soft, deep pink insides. They were like two different fruits.

I once had so many that I was grasping for ideas of what to do with them, and made up a fig pie. As I recall I added sugar and eggs, but past that, I don't recall. If I was doing it now. I'd add a little lemon juice, vanilla, touch of salt, and if we were using it, some milk. You could use spice if you felt like it, too. Cardamom, with little cinnamon, perhaps. etc. My children were small then, but really liked it, as did my husband!

Gee, Lizardz, the worst thing my grandad ever told me, was that he had a spaghetti farm. You know, loooooong, but thin! lol! Flies? I'm sure I'd not eat them, either, if I'd believed someone who said that!

Back to topic - I always get so hungry when I look at this post - so many great cooks and good things to eat. Supper tonight, I believe, will be a skillet lasagna, green salad and garlic bread. Looking forward to seeing what everyone else is planning.!

Mmmmm Now thats the good stuff. Its very cold here. Only 50...so its perfect to cook a bird :-D

Im am a pansy and get store bought. I just couldn't cook a silkie :p
Oh Im kidding hehe. I love my Silkies hehe

For tonight's dinner, I took the leftovers from the taco salad (shredded chicken, kidney beans, onion, corn) and created a layered enchilada type dish in my crockpot. I did more of a pink sauce by mixing some creamy ingredients in with the canned enchilada sauce I had in the cupboard. I layered corn tortillas, the above ingredients, sauce and cheese in 3 layers, finally topping it with tortillas, sauce, cheese, and olives. Easy and it'll be quick to get dinner on the table.
