I made tamales this weekend; one my favorites!

One is meat with red peppers, the others are chicken-cheese-green peppers.

This is one of the things I do with my pressure cooker....make meat or chicken for tamales, burritos etc.

And when I make the masa dough, I use light colored olive oil (yellow, not green), instead of lard. You honestly cannot tell, and it makes them healthier for us.

Did I mention how much I love tamales?

Char with pecan breadcrumb topping
quinoa with tomatoes, onions, pistachios & herbs
yard salad: dandelion greens, violets, watercress in cider vinaigrette
Lemon cake with whipped cream and strawberries
May punch (white wine punch with strawberries)

And Rosalind, I can just pop by your place for dessert! I love anything lemon, so a lemon cake with whipped cream and strawberries is perfect!

What? Is the Pope catholic? I grow collards, mustard, turnips, rape, rutabagas, cabbage and kale. If it's green, I grow it and we eat it. Greens are a staple in our diet. I filled a chest freezer this past winter with nothing but greens. I picked, cleaned, cooked and bagged over 150 bags of greens. The other two freezers are dedicated for spring crops, i.e. peas, butter beans, okra, squash, corn, snap beans, etc.
 
I worked in the yard all day, built a new pen and composter, weed eated, mowed and cleaned coops. I'm tuckered, we had a simple dinner of baked potatoes with chili and cheese on top. Plus sausage dogs.
 
Baked catfish (that recipe was an experiment, came out decent, I guess)
Stuffed potatoes (homemade)
Cole Slaw (homemade)
Corn (out of the can)
Light bread with butter

TUTTER:

I WANT SOME TAMALES!!! Can't hardly find the kind I like anymore, made by little old Catholic ladies to be sold by the dozen, or else sold at the monthly bingo. Yum. I have a great aunt that makes them, but she's so darn busy all the time, our schedules never mesh!

Mmmmm . . . Tamales!!! I'll be at Tutter's house tonight, especially for the chicken and green chili ones.

Yummy! One of these days, like Monica said, I'd like to learn how to make tamales. I hear it's pretty labor intensive.

Being that it's Cinco de Mayo, Mexican food is on the menu tonight. However, after the salsa making of last week, everyone is tired of eating the typical tacos, burritos, etc. So, I'm making a home made chicken mole and will serve it over rice with a side of black beans that I made in the pressure cooker. The Mole is on the stove right now and smells yummy! I can't wait to see the kids' faces when I tell them that there's chocolate in their dinner.

Oh, and we're having flan for dessert.

Sure do miss getting to be here daily.
Since my mom had a stroke and I have moved her in with me, and still try to work, take care of her and all the animals time just gets away.

Anyway, Last night was beef tips and egg noodles with green beans and rolls.

I sure am tired. But wanted to drop by and see what ya'll had been cookin while I have been gone.
 
I was to tired to post last night. I made a baked potato soup without a recipe. Just put one together. Topped it with green onions, shredded cheese and sour cream. Turned out very good and tasty, just like mom used to make.

I chose a hot day to make stock.

But, I used the large pressure cooker, so it didn't take nearly as long!

Dinner is Rustic Stew with corn bread and honey butter.

I never make honey-butter, but it came out fine.

Has anyone else stocked up on their favorite honey? It's not just getting more expensive daily, due to the bee problems, but it's getting hard to find some types. I figure that even if I only use it now and then, honey doesn't go bad.

I found only 3 small jars of the sage honey I like for chicken dishes, so got them; still have some misc. honey, and I cannot find anymore of my favorite...star thistle honey! Ack! (Nasty weed; nice, mild honey.) I used blackberry honey for the honey butter.

When the stock is cooler, I need to get it frozen into portions.
