Yogi, how do you cook your greens to freeze? I like them just as a "mess", but we also like collards sauteed, in soups, in scrambled eggs, in fried rice, etc.

So let me see, *taking notes*, that's 1 for eating tamales here, 1 for a tamale class, and one for both....do I have that right?

They aren't really difficult, actually, as much as time consuming. I make the fillings the day before, which helps. And usually wrangle someone else to soak the corn husks, tear the small ones into "ties", and hand them to me as I work.

Backyard Buddies, the mole sounds great! Were the kids impressed? I use a tad of cocoa in my "secret" barbeque sauce. I looove flan! My sister's mil makes wonderful flan!

2Dream, I'm so sorry to hear about your mom's stroke. I hope that she improves, and that you are also able to find some time to yourself. Even just a good book and a hot bath can make a big difference. (((Hug)))

Well, everything sounds good here tonight, but I tend to look oddly at old shoes when it's this close to dinner and I haven't had lunch!

So I just made spaghetti with meat sauce and salad for me and the kids. DH is working tonight.

I minced celery, carrots, and one big onion. Sauted with ground pork in olive oil and then add store bought spaghetti sauce...*sigh*

Can't wait to make a garden big enough to grow our oun vegies and can my own tomato sauce like some of you guys do

Tutter- Mexi tomatoes are to spicy for DGD, so I don't use them anymore unless it's something she won't be eating.

I was gone all day so it's homemade corndog muffins.

For all my greens, be it mustard, turnips, collards, etc. I wash them thoroughly ( 3 - 4 times ) in cold water. I then dice a 3 1/2# box of bacon ends and pieces ( per pot ) and cook it down. I pour off most all of the bacon grease and then chop the greens into the bacon and cook until tender, all the while adding enough water as necessary. I then cool the greens to room temp. and then bag them in Zip Lock freezer bags ( quart and gallon size) . They are table ready when removed from the freezer. Simply heat and eat.
I some times have two 22 quart pots of greens cooking at the same time.​
 
Yogiman - Yum! I'm going to have to add more greens to the garden. I usually just do spinach and chard, but I can see others coming up this summer!

Okay, I have to ask - I keep seeing mention of "sweet milk." What the heck is that?

Tonight a very simple supper - spaghetti, big salad, and garlic bread. Have lots to do in the garden and don't want to spend a lot of time cooking.

Sweet milk is county folk talk for whole milk. As kids growing up we had to be specific to the grownups about the milk or else we got buttermilk. Uck! I don't do buttermilk.

Here ya go, Liz!!!

Only true Southerners say "sweet tea" and "sweet milk." Sweet tea indicates the need for sugar and lots of it -- we do not like our tea unsweetened. "Sweet milk" means you don't want buttermilk.


Anyway, for supper tonight we had:

Fried chicken
Fried potatoes with green onions
Corn on the cob
Cole Slaw (leftover)
 
Thanks everyone for reminding me to take care of myself. Self has been on the back burner for a while but things are starting to settle down and routines are getting established. I promise to be nicer to myself.

Last night was Grilled Chicken breast with Grilled Herbed new potatos, green beans (from a can), rolls and of course Sweet Milk.

My home grown green beans are poking their little heads up from the garden. I planted more this year so hopefully I won't run out to soon like I did this year.
 
Thank you all for clearing up what Sweet Milk is. You know how ignorant we Californians are!

I'm clearing out my ebay room and setting up for a mondo yard sale on Friday and Saturday...so it's an easy night of baked ravioli (frozen) with left over spaghetti sauce and a blend of cheeses on top. Green beans and garlic toast.

I'm so tired of putting price tags on things...honestly I had way more stuff then I knew I did. Whew!!
