It's all up to you and what you think is best. Trust me we aren't picky at all. My background fabirc is white with tiny red sleighs. Haven't decided yet what colors I'm using for the chickens themselves.
The width of your stitch really depends on how you are adhereing them to the base fabric. If you are using Wonder Under or some sort of heatbonding, you will only need to make small stitches around it. I use a plain ol' kids glue stick and make my stitich a bit wider, because the glue stick is going to wash out on the first washing.
Color of stitching doesn't matter either. I use what I have in the machine until it runs out. I have a quilting book that I got when I first started teaching myself how to quilt, Willowood. It's an applique book. In that book the stitiching is just as important as the fabric pieces and should stand out. Sometimes I just use plain ol' black. It just seems to make the colors POP!
All we ask is that you do your best. We are all different skill levels. Heck I can't do paper piecing. Well, I can do it, but not 2 will come out the same size! That's why I tend to stick with applique. Yours are going to be just fine!
